Beet Syrup – A Sweet Invention of Our Ancestors
Unlike other Honey Bean tubes made with acacia honey, the base of this paste is beet syrup. Just like molasses, beet syrup is one of the traditional sweeteners our grandmothers swore by. It was once an essential ingredient in gingerbread, dark sauces served with carp, or even for dipping “peciválky” — old-fashioned Czech poppy seed buns.
Today, beet syrup is making a well-deserved comeback — not only because of its unique caramel-like flavour, but also thanks to its nutritional value. It’s made by slowly boiling pure sugar beet juice, naturally rich in minerals and plant-based sugars. A large portion of these nutrients stays preserved, making it a healthier alternative to refined sugar.
Its taste is sweet yet layered, with earthy, caramel, and lightly smoky notes. This complexity comes mainly from its high content of magnesium and iron, minerals essential for proper muscle and nerve function and for reducing fatigue. In smaller amounts, it also contains malic, citric, and oxalic acids, which lend it a pleasant tang.
The longer the syrup is cooked, the thicker and darker it becomes. During this process, melanoidins — brown pigments — are formed, giving it its typical color and caramel aroma while acting as powerful antioxidants. These help strengthen immunity and reduce inflammation in the body.
